    Abstract

    Although the toxicity of a number of arsenis species in fish and other seafood is well documented, little is known about the possible toxic effect of arseno-sugars in edible seaweed and shelfish. The goal of this project is to develop analytical methods for the speciation of these arseno-sugars and to evaluate the possible toxic effects of their metabolites on humans.

      Influence of dietary fiber in food of children below three years on the bioavailability of iron, zinc and calcium. 01/10/1999 - 30/09/2001

      Abstract

      The research contains two aspects. First the influence of different components of the dietary fiber complex will be studied by in vitro experiments and by in vivo studies by young children (below 3 years) in order not to disturb the recommended daily allowances for iron, zinc and calcium. Secondly the effect of the speciation (chemical forms) of the interested elements in the presence of components of the dietary fiber will be studied.

            Abstract

            In the NUQUAP PROGRAMME the Laboratory for Food Sciences of the University of Antwerp (UIA) will carry out quality assurance procedures for the validation of the complete analytical procedures for the determination of Ca, Mg, K and Na in three types of groups of food : spinach, whole-wheat flour and yoghurt. Ring tests will be set up to evaluate the obtained procedures.
